🍽️ Turkey Stuffed Zucchini Boats – A Healthy & Delicious Family Favorite! 🍃

We’re back with another delicious and nutritious recipe for our February Family Veggie Challenge! This week, we’re featuring a recipe shared by Quisha—Turkey Stuffed Zucchini Boats! These are packed with protein, flavor, and fresh veggies, making them the perfect healthy dinner option.
🌟 Recipe: Turkey Stuffed Zucchini Boats
Prep Time: 25 minutesCook Time: 50 minutes
🛒 Ingredients:
✔️ 4 medium zucchini (about 2 lbs.)✔️ 2 tsp. extra virgin olive oil✔️ 1 lb. ground turkey✔️ 3 garlic cloves, minced✔️ 1/2 onion, chopped✔️ 1/2 green pepper, chopped✔️ 1/2 cup reserved zucchini meat (from the center of zucchini)✔️ 1 tbsp. Italian seasoning✔️ 1 cup strained tomatoes✔️ 1/2 cup part-skim mozzarella cheese, shredded✔️ Salt & pepper to taste
👩🏽🍳 Instructions:
1️⃣ Prep the Zucchini:
Bring a large pot of water to a boil and preheat oven to 350°F.
Slice each zucchini in half lengthwise and use a spoon or melon baller to scoop out the center, leaving about 1/4-inch zucchini shell (save the scooped-out zucchini for later).
Place zucchini halves in the boiling water for one minute, then set aside.
2️⃣ Prepare the Filling:
Heat olive oil in a large skillet over medium-high heat.
Add ground turkey and break it into small pieces while cooking until lightly browned.
Stir in garlic, onion, green pepper, zucchini meat, Italian seasoning, strained tomatoes, salt, and pepper.
Let everything simmer for about 15 minutes until the veggies are tender and all the flavors are blended.
3️⃣ Assemble & Bake:
Place zucchini halves in a baking dish and fill each with about 1/2 cup of the turkey mixture.
Sprinkle 1 tbsp. shredded mozzarella cheese on top of each stuffed zucchini.
Cover with aluminum foil and bake for 30 minutes or until the cheese has melted and everything is heated through.
