Hey Family!

We’re officially 2 and a half weeks into the February Family Veggie Challenge, and I want to hear from YOU! How’s it going? Are you finding creative ways to add veggies to your meals, or has it been a bit of a struggle?

Shoutout to Everyone Participating!

We’ve already seen some amazing plates shared. From colorful salads to roasted veggies, it’s been inspiring to see the effort everyone is putting in.

How Are You Doing with the Challenge?

  • Beginners: Have you hit your goal of adding veggies to dinner at least 3 times this week?

  • Veggie Lovers: What new veggies have you tried so far? Did you find a new favorite?

If you’ve struggled to stay on track, don’t worry! It’s all about progress, not perfection. Here are some quick ideas to keep you going:✅ Toss spinach into your morning eggs 🍳✅ Add extra veggies to your pasta sauce 🍝✅ Try roasted sweet potatoes or zucchini as a side 🍠✅ Make a smoothie with spinach, banana, and berries 🍓

With one and a half more weeks to go, let’s push ourselves a little more. Challenge yourself to try a new veggie this week or find a new way to cook an old favorite.

I did have a bit of a challenge getting my veggies in this week (2/14-2/18) but I’m back on track!

I’ve got to watch getting caught up in doing for others before I do for myself.

Thats a great lesson to continue to work on because you can't continue to help if you're not good.
